Light Meals for the Light Rail




I am one of the thousands of college students that takes public transportation to school. I take the light rail to and from. In the morning I usually just grab a banana or a baggie of granola that I've prepared the night before. However, by lunch time I am always starving, but never want to eat a heavy meal. I've created a few light meals to bring with me to eat on the light rail home. My favorite by far is my take on the Chicken McWraps that McDonald's sells. Mine of course are less in calorie (325 calories to be exact) while McDonald's is 470 calories.



Start to Finish -10 Minutes (prep time five minutes) 15 minutes overall
Money spent to make - $2.80
Calories - 325


This quick and healthy lunch choice is simple to whip up and can be stored in a baggie or small Ziploc container, to fit in bags or backpacks. The crunch of the veggies and freshness of the wheat tortilla will leave you wanting to make it almost everyday.


Ingredients:
-Whole Wheat Tortilla (92 Calories)
-Carrots (21 Calories)
-Spinach (7 Calories)
-Cucumbers (8 Calories)
-Oven Roasted Deli Turkey (54 Calories)

You can use any dressing or keep it dressing free, I used ranch dressing as the glue to hold the whole wrap together.
 

Light Veggie Turkey Wrap
1 Whole Wheat Tortilla
1/2 cup chopped Carrots
1 cup Spinach
1/2 cup sliced Cucumbers
4 slices Oven Roasted Deli Turkey



Begin by placing all of the ingredients onto a plate, in the order that you want them to go on the wheat tortilla (See picture above). Lay out which ever dressing you have choose in a zigzag line, this way it'll be easier to spread with a knife before you lay the veggies and turkey down.




After spreading the dressing around evenly, start laying out the ingredients. Begin with laying the turkey down, add cucumber to completely cover the turkey. Next add the carrots, spreading them throughout the cucumbers. Then complete the wrap with adding spinach on top of the other ingredients.



After all of the pieces to the wrap have been placed, you are now ready to take the skills of watching many Chipotle workers wrap your burrito. It may be tricky. The carrots and cucumbers may try to escape, make sure you press them in hard while rolling and wrapping. Finally you have mastered the wrap making business and you are now ready to eat this marvelous creation that took you 15 minutes and less than three dollars to make!




As a side note I would like to add that you can make this vegetarian, vegan and gluten free as well. I added turkey for protein, however you can make this in many different ways.
