Simplicity of Snacks

I have a new favorite snack that I believe everyone should try. It is as simple and delicious as it is extremely affordable. I have recently started to indulge myself in grape tomatoes. In the past, I was never the tomato loving type. I actually would cringe at the sight of the slimy, seedy circles of red. Now the tables have turned and I can't stop popping these little bite size bursts of flavor. I have created, with these little fruits, my own take on a Caprese salad. I always have copious amounts of Mozzarella string cheese and get bored of just eating it plain. I decided to use my creativity and make a simple and quick Caprese salad that I can easily take on the go with me to campus, a snack for work or just to eat at home while watching television or studying. 

Ingredients: 


2 Mozzarella string cheese

1 cup grape tomatoes 
1 table spoon Balsamic vinegar 
1/2 teaspoon salt 
1/2 teapson pepper
(you can add basil if you would like to, or basil flakes)

Begin by slicing the mozzarella sticks into small chunks, set aside. Slice the grape tomatoes in half and heat pan to saute the tomatoes in 1 table spoon of Balsamic vinegar. Once the tomatoes have been heated and sauted, take off heat and set aside to cool. Add the mozzarella sticks to the a bowl, along with the sliced grape tomatoes. Sprinkle 1/2 teaspoon of salt and pepper, and serve. 


This snack is quick, under 60 calories and will fill you up. This is completely gluten free and vegetarian. It is the perfect small dish to bring to any wine night or gathering with friends.
