Tribute to Jack Johnson

Have you ever purchased bananas at the market and accidentally left them out for too long that they have turned brown? I have, plenty of times. I decided to try something new for breakfast and make a tribute to Jack Johnson. I have created a delicious and light Banana Pancake recipe. It is a simple and quick batter that can make up to 9 fluffy and filling pancakes. 

I made this recipe semi homemade. This dish can be easily made in any dorm room or small apartment. The main essential appliance that is needed is a small portable stove top. I personally own a stove, with a stove top, but I tried it on my personal stove top and it worked wonders. 

Start to Finish- 15 minutes (five minutes to make batter, two minutes for stove top to heat, eight minutes to cook pancakes)

Ingredients: 
2 cups of Pancake mix
1 cup of milk
2 eggs
2 cups of Bananas (replaces any oil you'll need)
1/4 cup of pecans
1 teaspoon of butter (for the stove top)
Optional - 1 tablespoon of Nutmeg

Begin by prepping the bananas, chop them into medium sized slices, place in a bowl. Add the two cups of pancake mix, one cup of milk and two eggs to a large mixing bowl. Whisk all of the ingredients until the batter is a cross between thick and runny. Make sure all of the dry pancake mix is completely stirred in. Add the bananas and chopped pecan's, stir until they are completely mixed in. 


Before and After
It is important to add butter to the stove top every time you place new pancake batter on the heat. This way they will not stick to the heated surface. I placed four pancakes at a time on the stove top, depending on how large the surface is you can add more. I start by making a "practice pancake", this way you will be able to know how hot the stove is and if you need to reduce or increase the temperature. Once you have found out the correct temperature to cook with you can begin by placing as many pancakes as the stove top can fit. Watch for the batter to bubble, once there are multiple bubbles and they begin to pop you can use your spatula to flip the pancakes over, check them every minute by lifting the side up to see how brown they are. 

Stack the Banana Pancakes on a plate, sprinkle a pinch or so of Nutmeg to the top of each pancake and serve with warm maple syrup. 

As singer Jack Johnson said "Maybe we can sleep in, Make you banana pancakes, Pretend like it's the weekend now". Take it from him and try this scrumptious Banana Pancake recipe! 

Also if you don't have any types of nuts, you can also add peanut butter ...This would then make it a tribute to Elvis!

  1. I love the song "Banana Pancakes" and am sure I'd love this recipe just a much. I'm making a point of making these pancakes while listening to Jack Johnson's song over break!
